So… all over Facebook and the Internet is the recipe for baking an egg in half of an avocado.
Well, guess what? It is insanely delicious! I tried the “plain” one which is simply to make a larger hole than what the pit leaves behind, crack in an egg, sprinkle with salt & pepper and cayenne and bake. It was good but lacked a little oomph.
So, I decided to put a slice of cheese (I used Jarlesberg – use whatever you like) in the bottom of the hole (why does that sound so weird?), crack my egg, sat, pepper & cayenne and bake it in a 400ºF (200ºC) oven for about 15 minutes – I like my yolk soft and runny without having the whites be, well, slimy… I was going to use another term but that would have been gross!
Uh… and if you are using a particularly large egg or a particularly small avocado… well, this could happen! Glad I put a piece of foil under the whole she-bang! I was also able to scoop up the cooked whites (No one need know. Well, besides you who are reading!)
Once out of the oven, I spooned over my home-made salsa. O. M. G. What a difference that made!
