What to Make For Supper?

Most days I have no clue what I’ll be making for supper until sometime after breakfast and before lunch when I suddenly realise I’ve taken nothing out of the freezer!  I then poke my head into the freezer, do a quick inventory and then simply choose the protein of the day.  (Or I send hubby to do it and let him choose!)  I always ensure I diversify from one day to another:  chicken, beef, fish, pork, vegetarian…  No two days in a row with the same protein!  Or most times, anyway!

So on this particular day, I ask hubby to take out a pack of boneless, skinless chicken thighs, figuring that something will come to mind while it thaws out.  This particular protein is so versatile, I can do anything I want, almost!

So, suppertime is fast coming up and I’ve still not totally decided except I know I want lemons involved.  And green olives.  So I Google recipes with chicken and lemons trying to find inspiration.  This is almost always my modus operandi!  I look at a few recipes, take some ideas from one place, mix it with ideas from another and then add my own two cents’ worth!

So, once I browned the chicken, I removed it, sautéed a sliced onion with 6 whole cloves of garlic, added capers, chickpeas, olives, juice of 2 lemons, chicken stock and brought it all to a boil.  Put my chicken back in, added the rest of the spinach I had in my fridge and decided to add a bit of cream.

Threw the whole thing in the oven to finish cooking the chicken while I put on some baby potatoes to boil.

Once the chicken was cooked, I drained the  potatoes and added them to the pot.

Checked my seasoning and served it.

‘Twas another success that my family enjoyed.  Now, I just have to write down exactly what I did so I can share the offiical recipe with you…. This is a problem with me that my husband constantly complains about.  I create a meal, they all love it and I’ve no clue what I did exactly!

  1. Dale, maybe you should install surveillance cameras in your kitchen so you can just rewind the tape and see how you whipped up your latest creation!
